Vegetable spring rolls – Lumpiang gulay

Vegetable spring rolls or we called in Philippines LUMPIANG GULAY,  easy to cooked vegetable spring rolls  using mixed vegetable stir fry that you can buy in any grocery stores.



Ingredients

  • 500g Vegetable stir-fry ( Carrots , Green Cabbage , Beansprouts , Red Cabbage , Red Peppers  , Sweetcorn)
  • Medium size Spring rolls wrapper
  • 2 gloves garlic, minced
  • medium size onion, chopped
  • 1 tsp. Salt
  • 1 tsp pepper
  • 200g Ready to Eat Cold Water Prawns (Shrimps)
  • 2 tbsps. Cooking oil and cooking oil for deep frying




Directions

  1. Sauté Garlic and onion in hot oil.
  2. Add Shrimps sauté for 2 minutes
  3. Add mixed Vegetables, add salt and pepper and stir fry for 5 minutes
  4. Adjust the taste add more salt and pepper if necessary.
  5. Let it cool for room temperature.
  6. Then wrap using spring rolls wrapper.
