Caldereta Beef ( Bakareta )

 Caldereta Kaldereta is one of the Filipino’s recipes which is very popular food to serve during Fiesta or any special occasion. There are different types and one of them is bakareta. It is made of BAKA meaning beef , the only different is there main ingredient , if we use beef we call it bakareta and goat for Kaldereta.

Now a days people are using caldereta-mix which is easy to use, but we don’t recommend because it  may contain food enhancer that may affect our health. In this recipe we only use natural flavor of fresh meat and vegetable.


  • 1 kg Beef , cubed
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, sliced
  • 1 tsp peppercorn, cracked
  • 2 bay leaves
  • 1 tsp. Salt
  • 1/2 cup liver spread or liver pate
  • 1 cup tomato sauce
  • 2 cups pineapple juice
  • 2 cups of beef broth
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, sliced
  • 1 medium red bell pepper , sliced
  • 1 tsp chili flakes (optional)
  • 2 cups vinegar (for marinate )


  1. Marinate the beef with vinegar , salt, pepper for at least 1 hour.
  2. Saute garlic , onion in the skillet until soft.
  3. Add the drained marinated beef and cook for 5 minutes or until the the color turn brown.
  4. Combine dried bay leaves and the remaining salt and crushed pepper corn.
  5. Mix liver spread and cook for 1-2 minutes.
  6. Pour-in the tomato sauce, pineapple, juice and beef broth. Bring to simmer for 1-2 hours or until the beef becomes tender.
  7. Add potatoes and carrots and cook for 5 minutes.
  8. Drop in green olives and bell pepper
  9. Add chili flakes (optional).
  10. Simmer covered for another 5 minutes.
  11. Serve with boiled rice and enjoy.
