Lechon Paksiw

Lechon paksiw using a leftover Lechon and Lechon sauce, cooked like adobo with vinegar, soy sauce and bay leaf . It can stay preserve for few days. It is a popular recipe to cook the day after the festival or after Barrio Fiesta. the word “LECHON” come from Spanish word meaning suckling pig that is roasted. “Paksiw” meaning cook with vinegar.


  • 1 kg Lechon leftover, cut into big cubes
  • 2 gloves Garlic, mince
  • 1 1/2 cups of Lechon sauce
  • 2 tbsp. soy sauce
  • 1 small bay leaf
  • 1/2 tsp. peppercorns
  • 1/4 cup vinegar
  • 40g brown sugar
  • 1/2 up pineapple juice
  • 1/2 tsp. salt


  1. Combine all the ingredients except lechon sauce.
  2. Cover and simmer for 20 minutes.
  3. Add Lechon sauce, and simmer for another 5 minutes.
  4. Serve and enjoy!
