RELLENONG TALONG – Stuffed eggplant

  • – 2 medium eggplants
  • – 2 Tbsp. cooking oil for Sautee
  • – 1/4 kg beef
  • – 2 gloves garlic, minced
  • – 1 medium onion, chopped
  • – 1 medium tomato, chopped
  • – 1/2 cup bread crumbs
  • – 2 medium eggs
  • – 1/2 tsp sugar
  • – 1 tsp salt
  • – 1/2 pepper
  • – 1/2 – 1 cup of oil for frying


  1. Wash eggplant, pierce a few times with fork.
    Microwave for 15 minutes. Let it cool.
  2. Heat 2 tbsp. Cooking oil and sauté garlic, onion and tomatoes.
  3. Add meat and cook stirring for 5 minutes or until meat turn brown.
  4. Season with salt, pepper and sugar. Let it cool.
  5. While waiting for meat to cool. Peel eggplants
  6. Flatten eggplants with fork, and deep into the beaten eggs.
  7. Add egg and blend mixture thoroughly.
  8. Mount meat mixture on each eggplant, press meat slightly to make it firm.
  9. Coat eggplant with bread crumbs. Stand for 10 minutes
  10. Heat oil in pan, Fry eggplant side down for 2-3 minutes. Turn over and fry other side for 2-3 minutes.
  11.   Serve hot and Enjoy!

What is Rellenong talong?

Relleno is a Spanish word meaning stuffing or stuffed and Talong is Filipino word for eggplant by North American ,also called Aubergine in Britain and brinjal in Southeast Asia. Rellenong talong is one of special breakfast “ulam” (foods to combine with rice) in the Philippines.

What are the nutritional benefits of Rellenong talong?

The nutrients you get from eggplants, beef and eggs are really good to start for your busy day. Eggplant is reach in fibre and vitamins while egg and beef are reach in protein.

Cooking technique.

All the Ingredients for Rellenong talong are widely available. So if you are planning to try this recipe the ingredients is not a big deal. Making rellenong talong is easy, just add sautéed minced beef to beaten eggs and put on top of broiled eggplant and fry. EASY RIGHT?

There are different methods of preparing talong, either by grill , boil or microwave. For better taste grilling is the best, but if you live in a cold places that outdoor grill is not available all year round, microwave is the easiest and convenient way. We can also use boiling method but it takes longer to cook and the flavour escape to the water.

How does it taste?

Smoky smell and taste of grilled eggplant with little spongy texture, yet crunchy because of breadcrumbs with combination with meaty taste and omelette flavour that is how I describe the taste of Rellenong Talong.
